At the helm of our restaurant, Chef Dhiraj brings 18 years of high-level experience, having worked in top hotels in Mauritius and also on international luxury cruise ships. Joining the Cotton Bay team, Chef Dhiraj has clear priorities: to promote Rodrigues’ traditional cuisine and emphasise sustainability. “We favour sourcing of fresh products from local suppliers around Rodrigues. This aligns with our policy of reducing plastic wrappings. I am happy to use fresh herbs and vegetables grown in our garden in signature dishes with a typical Rodrigues touch, highlighting a rich culinary tradition that is gaining increasing popularity.” – Our Chef says.
